Ingredients:

2 cups fresh cherry tomatoes, cut in half
extra virgin olive oil 
2 tablespoon butter
1 cup heavy whipping cream
1 cup Chardonnay wine
1/2 lb pancetta, diced 
1 lb uncooked shrimp (peeled and deveined) 
1 tablespoon cornstarch
5 garlic cloves, minced 
1/2 lemon juice
2 shallots, minced 
1/2 cup fresh Italian parsley, chopped
crushed red pepper flakes 
1/2 cup fresh basil, chopped
Homemade or Fresh Spaghetti
3/4 cup parmigiano-reggiano cheese
Directions:
  1. Circle aluminum Saute pan a couple of times with olive oil. Add Pancetta and saute on med heat until starting to crisp up.

  2. Then add the garlic and shallots until just tender then add crushed red pepper flakes. Add white wine to deglaze the pan and scrape up bits of pancetta and garlic/shallots

  3. until the pan is clean and continue to cook until reduced fully. Add Butter and stir all together till it starts to thicken.

  4. Add heavy cream and stir. If you want a thicker sauce add the cornstarch, just add slowly and stir constantly. Add the lemon juice and cheese and stir until blended. Add Shrimp and cook until pink. Add the tomatoes, basil and parsley at the very end.

  5. Cook Pasta as directed and toss together.
