Ingredients:

nonstick cooking spray
1 cup dried cherries
1/4 cup brandy or apple juice
3 Cups of half and half, or light cream
1/2 Cup sugar
2 ggs
2 eggyolks
1 tsp. vanilla
5 cups soft white bread crumbs, 6-7 slices cut into cubes.
4 oz. bittersweet chocolate, coarsely chopped
Directions:
  1. Preheat oven to 350 F. Lightly coat 8-6oz custard cups with nonstick spray. place cups in large roasting pan: set aside. in small bowl combine dried cherriesand brandy or juice: set aside.

  2. In medium sauce pan combine half-andhalf and sugar. Cook and stir over medium heat until sugar is disolved.

  3. In a mixing bowl whisk together eggs and egg yolk. Slowly ad half-and half mixture, whisking constantly.Whisk in vanilla. Stir in bread cubes. let stand at room temperature for 15 minutes. Stir in dried cherry-brandy mixture and divide among custard cups. evenly distribute chopped chocolate.

  4. place in roasting pan on oven rack. pour boiling water into pan halfway up sides of custard cups. Bake 30 minutes ot until knofe inserted near pudding center comes out clean. remove cups from water. Serve warm.
